September 28th, 2013 - Freezer Meals

Good morning!  Today's post is a guest blog by our very own Jessica - She is a licensed social worker, who is preparing to meet a very lovely little belly bean in a few short weeks.  She is a frugal mama, who has very sweetly offered to share her freezer meal work up with us!  Take a moment to see more about who she is by stopping by her blog here and her website here, then swing on down to see how she does what she does!

Well hello there! If you have not tried freezer cooking before, you are missing out...yes it requires work and planning up front, yes it is a big mess, yes it is a long day of cooking, and yes your grocery bill will look bigger up front, BUT then it’s DONE! Done meaning, all you have to do is throw it in the crock-pot, oven, microwave, or warm in up stove top and dinner is DONE! Done also means you don’t have to go back to the grocery store for a few weeks to a month, and even then usually just for essentials (milk, bread, eggs, etc).  DONE also means (this one is high on my list) that there is not a huge stack of “prep” dishes to do every night!

 

I have to give shout outs to http://smithlive.blogspot.com/ and http://melissafallistestkitchen.blogspot.com as they have both been fundamental in my planning, recipe selection, and overall freezer cooking experience. I feel like I have taken bits and pieces from both of them and adapted it to my taste and style.  I would encourage you to look at their websites!!

 

For right now, it is me and my hubby, so I make almost all of our freezer meal portions for two, so most of the recipes are for 4-6-8 servings so I portion it into smaller servings (and therefore get more meals). I have done 3 rounds of freezer cooking and each one has turned out a bit different as a result, but generally I get 30-40 meals, not including breakfast and lunch tacos/foods for $200-300.

 

TIP: Check out your Sunday circulars...meat is what makes meals expensive, so we try to plan around sales on ground meats, chicken, and pork. I often swap the meats in the recipes for whatever is on sale to make it cheaper!

 
OK, to get started you need to choose your recipes.  (You can follow that link, or select Freezer Meal Recipes from the left hand side of the page.) This past time I chose about 15 and the time before that about 10 or 12. These do include some sauces and soups, which I made large portions therefore getting more meals. Again, it depends on how many you are cooking for. Smithlive often doubles, triples, or quadruples her recipes to make about 25+. Either way, the goal is usually a month’s worth of meals in one day, factoring in a day or two of leftovers and eating out.

 
TIP: Look for recipes that call for the same ingredients, especially if you are just starting out. For example, if chili powder, ground mustard, soy sauce and rice vinegar are not staples in your house, buying these for just one recipe is not efficient. This is also true of things you might not use all of (canned adobo chilies, cream cheese, bbq sauce, etc). Try to find 2 recipes that will use the same ingredients to help lower cost!


Because I have done 3 rounds of freezer cooking now, I am going to list all of the recipes that I have used; again, it’s up to you which ones you want to use, maybe even start with 10. Also, a good portion of your favorite recipes can be modified into freezer meals, so if you have something you love, try freezing it! Disclaimer: a few of these recipes are new this round, so I cannot vouch for how they taste/turn out.

TIP: I print my recipes and put them in plastic sleeves in a 3 ring binder. This means I can take them out (of the binder, not the sleeve) easily and they are protected from the mess I make in the kitchen!


Last thing before the recipes...decide how you are going to package things. I LOVE LOVELOVE LOVE my foodsaver system and use this for almost everything except casseroles. If you don’t have a Foodsaver system, ask for one for Christmas, and until then use heavy duty quart and gallon freezer bags.

They are in alphabetical order. I have made notes in red- either changes I have made or notes on how to cook. If the majority of the directions are in red- do the directions in black and then stop when you hit the red. As with ANY recipe, read through all of the directions  prior to beginning.


COOKING

Use your judgment when cooking based upon the time you have and what you are using. Crockpot meals can be adjusted based on time and temperature. ALWAYS make sure to cook all meats thoroughly when reheating. If baking, usually 350 for 20-25 minutes is good and stovetop over medium high heat until cooked.

September 24th, 2013 - Frugal Living - Foaming Hand Soap

Frugal living this lovely week is going to focus on hand soap. I know. Hand soap.  Does it really cost that much? Well. If you think about it...At our house we use foaming hand soap dispensers, and we have one in each bathroom (3), the laundry room and the kitchen. So, at any given time, we have 5 hand soaps that we need to keep filled. And it costs extra! The kind that foams when you pump it? The dispenser costs more and so does the soap. 

Today, I'd like to introduce you to our foaming hand soap frugal living tip!

This recipe is super simple -

1.  Pour 1 tabelspoon of *ANY* soap you want into an empty foaming soap dispenser.

2.  Fill the rest with warm-ish water.  Leave a bit of room at the top.

3.  Shake until thoroughly mixed, and pump to get started.

Viola - Foaming hand soap, on the cheap!

September 18th, 2013 - Family Fun Time (Movies/Bread)

Family fun time this week comes with a free way to enjoy each other as a family, then a fun activity. 

Last week, we posted a deal for eating out for free.  This week, we are staying in. It's starting to get cooler out, and kids have more going on with school...I think a movie night is just what the doctor ordered!  A movie night is useful whether your children are toddlers (and maybe you snag a movie for mom and dad, for after the little is asleep) all the way through teenage years, where you might be able to convince your kids to hang out at home and watch a movie with you!

Now, I am going to go out on a limb, and ASSUME you have redbox.  This might not be true, but even in rural SD and in Nebraska, we had red box.  Listed here is a series of codes for you to use to grab a free movie - Enjoy!

Now, for a family activity - one of our favorite activities to do in the kitchen is bake bread.  There is something so soothing and simple about mixing, kneading and baking bread, and your home will smell like heaven!



I have a pretty standard recipe that is simple, and easy to use - once you get it down you can modify it however you want!
5 1/4 cups white bread flour
1 1/2 tsp. salt
1 1/2 Tbsp. instant yeast - I like Red Star
1 1/2 Tbsp. oil
3 Tbsp. sugar
2 cups warm water - just over 100 degree F
1.  Mix flour, sugar, salt and yeast.  Add the water and oil.  Mix another minute and check the dough. It should be sticky - you may need to add a bit more water
2. Mix for another 5 minutes or so, and don't add anymore flour after dough is done mixing.
3. Spray kneading surface with cooking spray and put dough on sprayed surface.  Knead dough briefly until it has a smooth even consistency.
4.  Divide the dough into a few pieces - 2+, and shape them how you like. Place them on a cookie sheet, cover and let rise for about 20-25 minutes.
5.  While rising, preheat over to 350 degrees F.  Before you put the loaves in, make a few slashes in the top of the loaf.  This just makes your bread look pretty - it prevents the bread from tearing itself open as it cooks.  
Cook until they are golden brown - about 25 minutes.  When they are golden, take them out and enjoy - we like to eat our bread fresh with a dab of honey on it!

September 17th, 2013 - Frugal Living (Economical Party Favors)

Frugal living today is on economical party treats! I know many people who read this blog are having or hosting showers for babes to be rather soon, and this is a GREAT (and CHEAP) party favor!  Pink or blue is probably a better choice for a shower, but my little loves colors, so rainbow it was for us!

We are always looking for treats at our house. One day, I came across this pin and thought, yes. That is EXACTLY what I would like to do.  So, I texted my mom friends to see if they thought it was safe to put a baby food jar in the over, and then figured, either way, its a win. I'll have cupcakes in a jar, or get a new oven!
First thing I did was pick up my girl after work, and go shopping. We got a cake mix with vanilla pudding in it (because this project was about ease, not betty crockerin' it up!), ten jars of baby applesauce and headed home.  Had I been more proactive, I would have also gotten more food coloring, but oh well. Live and learn and have pink instead of purple. We mixed up the batter, and I separated it into 6 bowls.  You have to use a LOT of food coloring to get the bold colors...we ran out of red. Which explains why purple looks like that!

Next, we spooned them into the baby food jars - we tried different heights, and different designs. We mostly did whatever we wanted, since who really cares what color a cupcake is? You are still going to want to eat it!

We DID learn that it is important to fill them about half full...

Otherwise, they spilled over. A lot. Sort of a fail there, but what can ya do!?!
We just chopped off the top, and put some frosting and sprinkles on - delicious! We also put whip on some. My daughter did not have a preference - she loved them both equally!
